Here’s how the dosage side actually works.

How STPP works in shrimp

STPP (and blends with related polyphosphates like SHMP) works by increasing the water-holding capacity of muscle protein — the phosphate raises pH slightly and helps unwind protein structure so it binds more water. In frozen shrimp specifically, this reduces the drip loss and texture degradation that otherwise occurs through repeated ice crystal formation during freezing, storage, and thawing.

Typical dosage and soak concentration

Soak solutions are commonly prepared in the range of 3–5% STPP by weight in water (sometimes blended with salt and other polyphosphates), though the exact concentration a processor uses depends on shrimp size, target retention, and the specific finished moisture spec they’re working toward. This is a starting reference point, not a fixed recipe — processors typically run their own trials to dial in the exact concentration for their product and equipment.

Why processors use instant STPP for this application
Standard STPP dissolves fully only in warm water, which isn’t practical for a cold soak tank. Instant (fast-dissolving) STPP is engineered to dissolve in cold or salted water, letting processors run soak tanks at refrigeration temperatures without a heated mixing step.

Soaking time and method

Soak time is typically managed in the range of 15–60 minutes depending on shrimp size and target uptake, with larger shrimp generally needing longer exposure to achieve even penetration. Continuous agitation or tumbling helps ensure uniform uptake across the batch rather than surface-only absorption.

Regulatory moisture limits

This is the part that actually determines your dosage ceiling, not the soak recipe. Import markets set maximum moisture content limits for treated frozen shrimp specifically to prevent excessive water weight from phosphate treatment being sold as product weight. Limits vary by market and shrimp form (peeled, tail-on, breaded, etc.) — always confirm the current limit for your specific destination market and product form before finalizing your soak protocol, since exceeding it is a compliance failure regardless of how well the shrimp tastes or looks.

Processors typically check: soak solution concentration (verified, not assumed, since evaporation and carryover shift it over a shift), finished product moisture content against destination limits, and visual/texture quality after the full freeze-thaw simulation.
