SAPP (sodium acid pyrophosphate) is the phosphate world’s answer to a very specific baking problem: how fast should your leavening acid react with baking soda? What the numbers mean
SAPP grades are numbered according to their reaction rate index — a standardized measure of how quickly the acid releases carbon dioxide when combined with sodium bicarbonate in a water solution, tested at a set temperature and time interval. Lower numbers react faster; higher numbers react slower and are more heat-activated. It is not a purity or quality grade — a SAPP 40 is not “better” than a SAPP 15, just tuned for a different job.

- Immediate bake (donuts, griddle products): SAPP 15 or 22 — you want lift now, not twenty minutes from now.
- Standard shelf-stable mixes: SAPP 28 is the most common all-purpose choice for dry baking powders and self-rising flour.
- Refrigerated or frozen dough: SAPP 40 holds its leavening power through cold storage and only activates fully once real oven heat arrives.
Combining grades
Many commercial baking powder formulations blend two SAPP grades — commonly a fast grade for early oven spring and a slow grade for final rise — to get a two-stage leavening profile rather than a single reaction curve.
